    We love the breakfast for dinner! I usually make a batch of shredded chicken in the instant pot and use that for quick quesadillas, tacos, fajita bowls, and enchiladas. Super quick and easy.
    My kids also love ‘sparkle chicken’- I get plain chicken tenders, place them in Pyrex and add olive oil and just lightly sprinkle Italian bread crumbs and bake for 20-30 min. Add a side of veggies and some noodles and done!

    Some kind of prepped salad - tuna salad, chicken salad etc..., PBJ or a rice cake with peanut butter/banana slices, a frozen meal (you know like Lean Cuisine but...elevated and organic ha), sliced up avocado with lots of salt & pepper and Cholula, or I half-ass dupe a Chick-fil-a kale salad (kale, their apple cider vinaigrette which you can buy on-brand or off, and either bacon or pre-made grilled chicken kind of cubed up)

    I'm always hungry. Clearly.

    I have found getting them involved with food prep can be really helpful and making it more fun. There are super cute little animal food picks on Amazon that my kids love and even making fun shapes with how you cut things up can help. Keep offering variety of food and always have a safe food. Kids eat in color is a great resource and they have a self guided program called Better Bites that’s great!
